Travel experiences can stay with you for years through journaling, pictures, souvenirs, or memories you cherish.  You might reflect on the accommodations you stayed in, sights you saw, the people you met or the food you ate. 

When dining during your travels, trying the local specialties may open your eyes to different types of food you learn to love.

This week let’s travel to Ireland, a country I could visit over and over again.

There is a misconception that Ireland’s food is dull and just “meat and potatoes”.  Farm-to-table is not a new concept in Ireland; that’s how it has always been there and thus there is amazing fresh, local food everywhere you go.  Being an island, there is an abundance of seafood options. Healthy and tasty fish will be available on most menus.

Travelers from the Lowcountry of South Carolina, known for oysters, have said the oysters in Ireland have a different salinity and are delicious. 

Scones are a delectable treat to be had at breakfast, or any time of day served with tea.  Irish scones are not as big or sweet as the English variety. This recipe comes from a cooking school, which is an experience I often arrange for culinary aficionados, in the Dingle Peninsula.

Irish Scones

Ingredients:

3 2/3 cups flour

¼ cup sugar

7 tablespoons butter (cubed)

2 eggs

2/3 cup milk

1 ½ tsp baking powder

Pinch of salt

Toppings: butter (Kerrygold) and jam

Instructions:

Pre heat oven to 375-degree Fahrenheit.

Sift the flour and place it in a large mixing bowl. 

Add the dry ingredients together and mix with an electric mixer for a few seconds.

Add the butter and allow it to ‘rub in’, allow it to mix until it starts to resemble a sandy texture.

Add the eggs and then the milk in stages until it comes together.

At this stage take the dough and place it on a floured surface.

Roll out the dough and shape the scones.

Brush with egg wash then sprinkle sugar over them.

Bake in the oven for 15-20 minutes.

Allow to cool and spread with butter and jam of choice.  Just like the ‘chicken or egg’ paradox, the unanswerable scone question is which goes on first, the butter or the jam?
