When dining during your travels, trying the local specialties may open your eyes to different types of food you learn to love.
This week let’s travel to the Caribbean island of Jamaica, known for jerk chicken.

Jerk Chicken Rice Paper Summer Roll with Mango Sweet Chili Dipping Sauce
Summer Roll Ingredients:
8oz chicken breast boneless
1/3-teaspoon black pepper
1-tablespoon jerk sauce
1/2 oz shredded cucumber
1/2 oz shredded carrots
1/2 tbsp chopped green onions (green part only)
1 handful of mixed baby greens
1/2 oz sliced mango
8 (6-inch) round sheets rice paper
Lukewarm water (season water)
IMPORTANT: Marinate chicken with pepper, jerk sauce overnight.
Method
Cook chicken on a grill (7-8 minutes) or in an oven (8-10 minutes at 350 degrees). Once chicken has been cooked and cooled, cut into thin strips and set aside.
In a large bowl, add the lukewarm water, 3 oz rice wine vinegar and a pinch of sugar. Place rice paper one at a time inside the warm water, removing when soft and malleable. Lay wet rice paper on damp towel, wiping away any excess water.
In the center, place a few leaves of baby greens, two or three mango slices, shredded carrots, cucumber, green onions, and the strips of jerk chicken. Roll up one end of the rice paper then fold in the two outsides and roll.
Mango Sweet Chili Dipping Sauce
Dipping Sauce Ingredients
1 mango, peeled and diced
pinch of salt
4 tbsp corn oil
1 Scotch Bonnet pepper (de-seeded) – can be replaced with ½ tsp of dried chili flakes
Method
Sauté diced fresh mango with a pinch of salt in a saucepan thinly coated in corn oil.
Cook on low heat for 8-10 minutes.
Puree mango in a blender then pass through a strainer before adding finely chopped scotch bonnet pepper (can be substituted with dried chilli flakes) and julienne of mint.
